Vinification
Ripe fruit, soft tannins
The grapes are hand-harvested and fermented separately in temperature-controlled steel tanks. Fermentation is interrupted at the ideal point to preserve a touch of natural sweetness, followed by gentle maceration and a period of maturation in oak.
The result is a deep ruby wine offering ripe berry and dark-fruit aromas wrapped in soft, rounded tannins, with a smooth, well-balanced finish. Malolactic fermentation follows full alcoholic fermentation; the vines grow on iron-rich clay forest soils.
